Microwave Raspberry Jam

Put a new twist on raspberries with this easy jam recipe.

  • 250g fresh raspberries
  • 1 cup caster sugar
  • 1 tablespoon lemon juice

Combine raspberries, caster sugar and lemon juice in a microwave-safe bowl. Cook on High, stirring every 1-2 minutes (stir more often at end of cooking) for 10 minutes or until thickened. To test if jam is ready, place 1 tsp jam on a chilled saucer.

Place in freezer for 1-2 minutes or until cooled slightly. Lightly push jam with your finger. If surface wrinkles, it's ready. Transfer to a sterilised jar.
