Strawberry And Passionfruit Pikelets

Colourful, tasty and low fat, these pikelets are the perfect choice for afternoon tea, dessert or brunch.

  • 2 tablespoons fresh ricotta
  • 1 tablespoon strawberry jam
  • 4 bought pikelets
  • 4 strawberries, washed, hulled, thinly sliced
  • 1 passionfruit, halved, pulp removed

Place ricotta and jam in a small bowl. stir until well combined. spread the ricotta mixture evenly over pikelets. top with strawberries and passionfruit to serve.
