Colourful, tasty and low fat, these pikelets are the perfect choice for afternoon tea, dessert or brunch.
- 2 tablespoons fresh ricotta
- 1 tablespoon strawberry jam
- 4 bought pikelets
- 4 strawberries, washed, hulled, thinly sliced
- 1 passionfruit, halved, pulp removed
Place ricotta and jam in a small bowl. stir until well combined. spread the ricotta mixture evenly over pikelets. top with strawberries and passionfruit to serve.
